Baby Porcupine Meatballs

Make these either the night before or in the morning, the taste gets better over time!

large onion, finely chopped
garlic cloves, finely chopped
1 cup long grain rice
500g extra lean beef mince
beef stock cube
pinch salt and pepper
pinch chilli flakes, to taste
2 x can low fat condensed tomato soup
water
1tsp Worcestershire sauce

Preheat oven to 180°C, Gas mark 4, 350°F.
You need: a mixing bowl, a casserole dish & a blender (if using).
In a bowl, mix together the onion, garlic and rice thoroughly with the mince. Add the stock cube (crushed), salt, pepper and chilli flakes. Roll mixture into medium size meatballs and place into a casserole dish.
Pour both cans of tomato soup into a bowl, add ½ can of water and a teaspoon of Worcestershire sauce, mix well. Pour mixture over the meatballs, cover with tin foil and pop into the oven for about an hour - hour and half, until bubbling and the rice is cooked through.
**I use a blender to chop the onion & garlic into extra small pieces!
Best served with mashed potatoes and lots of green veg!
