This Bacon and Pepper Jack Strata was a brunch hit, but good enough to make it for dinner too!

4 ounces (about 4 slices) of thick cut bacon slices, chopped
6 large eggs
1 1/2 cup whole milk
1/4 teaspoon dried thyme
ground black pepper
4 ounces pepper jack cheese, shredded (1 cup)
1 medium onion minced (about 1 1/2 cup)
1/2 teaspoon salt
6 slices high-quality white or wheat bread, cut into 1 inch squares
