Bacon Ranch Chicken Mac n Cheese

Lighter than traditional Mac n Cheese, but still full of flavor! It amazed me how much flavor just 4 pieces of bacon added to this dish. This mac n cheese is full of flavors that my family loves--bacon, Ranch, chicken, cheese and pasta. This is also a great dish to make with leftover turkey from the holidays. Enjoy!

1 lb. box of uncooked elbow macaroni
4 slices bacon
16 oz or about 3 cups of cooked chicken or turkey, cut into 1/2 inch pieces
OR you can use uncooked skinless, boneless chicken breast, cut into 1/2 inch pieces
freshly ground pepper
2 Tablespoons butter
2 Tablespoons flour
3 cups fat free milk
2/3 cup condensed cream of chicken soup, undiluted
1 1/2 cups shredded mozzarella, provolone, parmesan mix or shredded Italian blend
2 teaspoons Ranch seasoning
cooking spray
1 cup shredded colby-jack cheese
