Banana-chip Muffins
These muffins are extremely easy to make, and they taste amazing. I've tried a LOT of banana bread recipes and this one is delicious.
3 large, over ripe bananas
1 egg
3/4 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon baking powder
1 1/2 cup flour
1/3 cup melted butter
chocolate chips
brown sugar and cinnamon for topping
1 egg
3/4 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon baking powder
1 1/2 cup flour
1/3 cup melted butter
chocolate chips
brown sugar and cinnamon for topping
Mash the bananas, then add the egg. Add sugar and mix well. In a seperate bowl, combine the dry ingredients and then add the banana mixture. Melt the butter and mix well. Fold in chocolate chips. Grease your muffin tin, and fill at least 2/3 full. I like to sprinkle brown sugar and cinnamon on the top, but this is completely optional. Bake in a preheated 350 oven for 15 minutes or until done.
