Bean and Beef Burritochiladas

Burritos + Enchiladas = Burritochiladas

1 lb. ground beef
1 pkg. taco seasoning
2 cans fat-free refried beans
2 cups shredded cheddar cheese, divided
28 oz. can enchilada sauce (I prefer El Pato Mild Enchilada Sauce)
16 flour tortillas, 6 inch size
Brown ground beef, then drain. Return to skillet, add taco seasoning and a small amount of water (a few tablespoons) to help blend the ground beef and taco seasoning. Stir in refried beans and 1 ½ cups shredded cheese. Cook over low heat until cheese is melted and beans are warmed through. Place tortillas between 2 paper towels, then sprinkle top paper towel with water. Heat in microwave until warm and flexible enough to roll, approximately 20-30 seconds. Spoon bean, beef and cheese mixture down the middle of the tortilla (approximately 3-4 tbsp.) then top with cheese. Roll up tortilla and place seam side down in an greased baking dish (I use Pam cooking spray). Pour enchilada sauce over top and bake at 400 degrees until bubbly. Remove from oven and top with remaining cheese. Return to oven until cheese is melted.
