Beef and Bean Burritos with Sour Cream-Poblano Sauce

Once you try these Tex-Mex burritos, you'll never be able to go back!

1 Tablespoon olive oil
1 onion, diced
1 pound ground beef or turkey
3 cloves garlic, minced
1 Tablespoon tomato paste
1 can black beans, drained and rinsed
1/4 cup water
1/2 teaspoon cumin
1/2 teaspoon oregano
1 1/4 teaspoons chili powder
1 teaspoon brown sugar
salt to taste
1 cup shredded Mexican cheese
7-9 tortillas, small-medium tortillas (I didn't use the large burrito sized ones)
Cooking spray
2 (4) poblano peppers
2 (4) Tablespoons butter
2 (4) Tablespoons flour
2/3 (1 1/3) cup chicken broth
1/2 (1) cup sour cream
salt and pepper to taste
