Beef Barley Soup

An excellent classic recipe that will please the entire family.

8 ounces of onions diced
1 pound of potatoes cubed
6 ounces of carrots sliced thin
4 ounces of parsnip cubed
12 ounces pearl barley
72 ounces of water
6 ounces of whole milk
18 ounces of canned beef broth
3 beef bullion cubes
1 teaspoon each of salt, black pepper, thyme and rosemary
2 ounces of salted butter
Place all of the ingredients except the milk and butter into a large stew pot, cover and cook on medium heat for 2 hours and 45 minutes stirring occasionally. When the barley is soft remove from heat and stir in the milk and butter and let stand for 15 minutes before serving.
