Beef & Barley Veggie Stoup

A hearty hybrid of soup and stew, the Beef & Barley Veggie Stoup serves best as a full meal. Packed with veggies, you'll be satisfied, but not overstuffed. This stoup is full of lots of yummy goodness!

2 cans beef broth
4 cans water (use one of the broth cans)
1 medium sweet onion (such as Vidalia), chopped and sautéed
1 pound ground beef, browned and drained (I used 85/15)
1 package baby carrots
16 ounces small red potatoes, chopped (but not tiny)
1/2 to 3/4 teaspoon ground black pepper
1/2 to 3/4 teaspoon garlic salt
Salt and creole seasoning to taste
3 cans Italian Style diced tomatoes
3/4 cup quick-cook barley
16 ounce bag frozen lima beans
12 ounce bag frozen sweet corn
12 ounce bag frozen green beans (I used French Style - my hubby's favorite)
2 cans cannellini beans, rinsed & drained
