Today, I share one of my all time favorite recipes ever. This dish is rich and flavorful as well as full of sentimental value for me. See, we have this lovely family that we decorate cookies with every year and I always make this for the adults when we get together for our annual party. There is nothing more satisfying than beef braised in red wine then served with a loaf of crusty bread and simple salad. Try this for your next gathering and I promise, you will not be disappointed. 8 oz. bacon, diced
2 1/2 lb. beef chuck, cut into 1" cubes
Salt and black pepper
1 lb. carrots, peeled and sliced diagonally into 1" chunks
2 yellow onions, diced
2 t. (2 cloves) garlic, minced
1/2 c. cognac or brandy
1 (750 ml) bottle dry red wine such as Cote du Rhone or Pinot Noir
2 c. beef broth
1 T. tomato paste
1/2 t. dried thyme
4 T. unsalted butter at room temperature, divided
3 T. all purpose flour
1 lb. fresh mushrooms, sliced
Crusty bread, for serving
