Stew meat cooked slowly in the slow cooker make these burritos absolutely wonderful any time of the year.

2 lbs beef stew meat
Salt & pepper to taste
1 tablespoon olive oil
1/2 cup onion, chopped
1 can kidney beans, well drained & rinsed
19oz can of enchilada sauce (I like red)
1 or 2 beef bouillon cubes
6-8 tortilla shells
1 can refried beans
1 1/2 cups shredded cheddar cheese
