Beef Cabbage Rolls

These are very moist cabbage rolls that are delicious with a side of sour cream.

Stuffing:
2 lbs ground beef
2 cups uncooked rice
1 tbsp olive oil
2 large carrots,shredded
1 medium onion, chopped
3 tbsp mayonnaise
1 1/2 tsp salt
1/2 tsp paprika
1/2 tsp black pepper

Wrap:
1 larg e cabbage

Sauce:
3 tbsp tomato paste
3 cups water
1 medium onion, chopped
1 tsp salt
2 1/2 tsp sugar
3 tbsp olive oil
1 tbsp flour
Simmer 2 cups of rice as directed on package and add salt to 1/2 tsp salt to rice while it is cooking. Cool rice in a bowl. Cut off the bottom of the cabbage and place on papertowel in microwave for 7-10 minutes. The cabbage needs to be soft and easy to handle. Cool the cabbage. Saute chopped onion and shredded carrots in 1 tbsp of olive oil for 5-7 minutes. Combine cooked rice, sauteed onion and corrots, uncooked ground beef, mayonnaise, 1 1/2 tsp salt, 1/2 tsp paprika, 1/2 black pepper. Mix well to combine all ingredients evenly. Stuffing is ready! To make cabbage rolls: If leaves are big, cut them in half. Add 1-2 tbsp of stuffing closer to the edge of the cabbage, fold in the sides and roll the stuffing to close the stuffing in the cabbage leaf. Place finished cabbage rolls in a deep baking dish. Time to make the sauce! Saute medium chopped onion in 3 tbsp olive oil. Add tomato paste and flour and combine. Add water, salt and sugar. Mix well and simmer for 5 minutes. Pour the sauce evenly over the cabbage rolls evenly. Cover with foil and place into oven for 3 hours at 375*F. Remove from oven and enjoy!
