Beef & Veggie Chili
You’ll get a healthy portion of veggies with this easy Beef & Veggie Chili along with a lot of delicious, bold flavor!

1 tbsp olive oil
1 (8 oz) pkg cremini mushrooms, quartered
1? lb ground beef
1 medium onion, chopped
1 red bell pepper, chopped
2 carrots, peeled and chopped
A few sprinkles red pepper flake
3 large cloves garlic, minced
1 (12 oz) beer
2 (15 oz) cans kidney beans
2 (15 oz can diced tomatoes
2 (15 oz) cans tomato sauce
3 tbsp chili powder
1 tbsp cumin
2 tsp smoked paprika
1 tsp dried oregano
1½ tsp salt
1 tsp black pepper
? cup fresh cilantro, finely chopped

Heat olive oil in a large pot over medium heat.
Add mushrooms and sauté until browned.
