Beefy Marsala Stroganoff

A twist on the classic dish that gives it an Italian flare with Marsala wine and Parmesan.

1 small yellow onion, diced
Spray Olive Oil (I buy good quality olive oil and put it into a Misto oil sprayer)
¼ cup Marsala Wine
¾ tsp. Kosher Salt
¼ tsp. pepper
10 0z. Beef Broth
4 oz. baby Portobello mushrooms, sliced
1 lb lean ground beef ( I used ground sirloin)
8 oz. sour cream
1 tbs. garlic
¼ cup flour
8 oz. wide egg noodles
¼ cup shredded Parmesan cheese, plus some for serving
2 Tbs. dried parsley, for garnish
