Pulled pork is all the rage these days and it is usually said that when fast food chains embrace an ingredient, it is over for it. Not in this case! Pulled pork is absolutely delicious and addictive. It is so versatile...throw it on a bun with fresh coleslaw, on a pizza with some peppers, in a taco, in an omelette...I could go on, but you get the idea.

2 pound boneless pork shoulder
1 large onion
2 celery stalks (cut into big chunks)
1 whole head of garlic
2 limes
3 jalapenos (cut in half)
16oz dark ale (tall boy can)
1 tbsp whole cumin
1 tbsp whole mustard
1 tbsp whole coriander
1 tbsp whole mustard
¼ cup chopped cilantro
salt and pepper to taste
