Beet Borscht with Beef

Beet Borscht has always been a favorite of ours, and when we saw a recipe to try it our with beef mixed in we knew we had a winner. Hearty and super tasty, this soup is great in the winter, and all year round!

3 tbs olive/grapeseed oil
6 beets, trimmed
2-3 lb stewing beef, cut into pieces
2 leeks, coarsely chopped
2 carrots, chopped
2 tbsp tomato paste
1/4-1/2 head of cabbage (depending on how much you prefer)
2 yellow potatoes, cut into pieces
6 dill sprigs
5 tbs red wine vinegar
1/3 cup brown sugar
Water
Salt and pepper
