Beetroot salad with grapefruit

This simple citrusy beetroot salad is full of flavour, colour and veggie goodness

2 medium/large beets, cooked

1 white grapefruit, peeled, cubed

220 g halloumi cheese, sliced

2 tablespoons almond flakes

A good helping of watercress or pea shoots, roughly chopped

Sea salt and pepper to taste

For the dressing:

3 tablespoons good vegetable oil (ex. rapeseed)

3 tablespoons lemon juice

1 tablespoon honey

1and 1/2 teaspoons ginger, peeled, finely grated

Marinated Taro Root

A marinated snack that can be used to replace late night bad habit cravings!

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
