This is a treasured family recipe. Good enough for a fine dinner party but easy enough to make for any occasion at all. Serve with Tortellini Alfredo or any kind of potatoes at all. Very versatile.

5 lbs fresh beef brisket
2 tsp salt
2 onions, sliced
4 whole celery stalks
¼ tsp pepper
2 cups chili sauce
1 small can tomato sauce

Place beef in roaster, fat side up.
Season.
Arrange onions, celery, chili sauce & tomato sauce on top.
Add ¼ cup water in bottom of pan.
Roast 1 hour per pound, in the oven at 325°.
