Berry Cheese Rice Ball

Cheesy rice ball, an appetizer disguised as dessert.

1 cup cooked sushi rice
1 oz. Romaine lettuce
2 oz. tuna
2 oz Brie cheese
2 raspberries
Wet your hand, shape half of the rice into a ball. Using your thumb, dig a hole in the center, put in some crab meat, then cover up and squeeze tightly. Put the rice ball on a serving plate. Cut out a piece of Romaine lettuce about the width of the rice ball. Spread out some Brie on the lettuce, then place the lettuce on top of the rice ball. (You can melt the cheese by placing it in toaster oven for 1 minute, or microwave 10 seconds.) Top with a raspberry.
