Best Ever Coconut Bread

While I lived in Australia, I had the privilege of trying some coconut bread. It was new to me and OHSO good! When I came back to the States, I tried finding a recipe. Out of desperation of finding that perfect recipe, I finally started experimenting and this is what I came up with. It's soft and crumbly and you'll be coming back for more!

2 Cups Sugar
1 Cup Buttermilk
1/2 cup whipped butter
4 eggs
1/2 cup applesauce
2 tsp coconut extract
3 Cups flour
1/2 tsp baking soda
1/2 tsp salt
