Best Ever Vegetable Soup

This soup is best when simmered a couple of hours. It's, also, a great soup to empty out your refrigerator and freezer. I put, almost any vegetable in it except red beets. It's never the same.

soup pot filled ? full of water
1½ to 2 lbs. beef with bone in (chuck roast is good)
3 carrots sliced
3 stalks of celery sliced
1 medium onion chopped
2 to 3 T dried parsley flakes
3 cloves of garlic minced
large can of chopped tomatoes
1½ c whole corn frozen
1½ c peas frozen
1½ c string beans cut in 1 inch pieces
2 small zucchinis and/or yellow summer squash sliced
small head of broccoli cut into bite sized pieces
small head of cauliflower cut into bite sized pieces
½ head of cabbage chopped (not too tiny) cut head in half and slice in 1 inch slices, then cut them in half or thirds.
½ tsp. basil
2 tsp. salt and pepper to taste
1½ c barley
