Black Bean and Beef Enchiladas

My family loves these easy enchiladas. They can be made ahead and frozen for a really quick dinner later on.

Sauce:
2 8 oz cans tomato sauce
1 1/2 cans water (use the emptied tomato sauce cans)
1 pkt. chili or taco seasoning (or 3-4 Tbsp if you buy it in bulk like I do)

Filling:
1# lean ground beef
1/2-3/4 cup sauce
1 can black beans, drained
1/2 cup grated cheddar cheese

Additional ingredients:
8-10 flour tortillas
1-2 cups grated cheddar cheese
For sauce: Bring all ingredients to a boil in a small saucepan. Reduce heat and simmer 15 minutes uncovered. For tortillas: Brown ground beef and drain fat. Add sauce, beans, and cheese. Heat through....
