Blueberry Coffee Cake With Crumble Topping!

There's nothing like a piece of fresh baked coffee cake to go along with our afternoon tea!

1 Cup Sugar
1 3/4 Cups Flour
3 Tbsp Shortening
3/4 Cup Milk
1 Egg
2 Tsp Baking Powder
1/2 Tssp Salt
1 1/2 Cups Blueberries, fresh or frozen

Topping:
1/4 Cup Butter
1/3 Cup Flour
1/2 Cup Brown Sugar
1/2 Tsp Cinnamon
A) In a large mixing bowl, Cream shortening and sugar, add egg. B) In another bowl, sift all dry ingredients together. Mix half of the dry ingredients with the blueberries. C) Combine the rest of the flour with creamed mixture, fold in blueberries. D) Top with crumble crust and Bake at 325F for 40-50 Minutes. until golden brown.
