1/2 onion, diced
4 cloves garlic, minced
2 carrots, peeled and chopped
2 stalks celery, chopped
1/2 teaspoon ground sage

1 (750 ml) bottle dry red wine
1 (28 oz) can crushed tomatoes
1/2 cup whole milk
1 cup grated Parmesan cheese
