Breakfast casserole made healthier by adding vegetables and using fresh potatoes.

1 pound russet potatoes, scrubbed and diced, skins on
2 bell peppers (any color will work), diced
1 onion, diced
20 cherry tomatoes, cut in half
12 large eggs
1 cup fat free milk
1 cup cheddar cheese, shredded
1 teaspoon black pepper
