Broccoli & Cheddar Mac 'n Cheese

This Broccoli & Cheddar Mac 'n Cheese is a meal all it's own, but if you like - add a side of grilled chicken and a salad and you've got a tasty combination.

1 lb. whole what or whole grain penne with lines
2 bundles broccolini, trimmed and cut into 1-inch lengths or 1 large head of broccoli trimmed and cut into small florets
4 tbsp. butter
2 cloves garlic, finely chopped
3 tbsp. flour
1/2 c. chicken stock
2 c. milk
2 1/2 c. extra sharp yellow cheddar cheese, divided

1/4 c. chives, chopped or 2 scallions, thinly sliced, optional

Marinated Taro Root

A marinated snack that can be used to replace late night bad habit cravings!

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
