Brunchtime Hashbrown Casserole

Delicious casserole with red pepper and spinach, for some pops of color as well as some crunch and texture.

1 can cream of chicken soup (10.25 oz)
8oz shredded cheddar jack cheese
1/2 Large red bell pepper (diced)
1/4 Large red onion (diced)
1/2 cup butter (melted)
1 teaspoon salt
1 teaspoon ground black pepper
1 tablespoon chopped fresh dill
1 cup chopped fresh spinach
2lb frozen hash browns (thawed)
In a large bowl, add everything but the potatoes. Mix well. Gently fold in the potatoes and stir until the potatoes are coated. Spray a large casserole dish with cooking spray and pour the mix into it. Top...
