The perfect summer side dish or appetizer, which takes advantage of ripe produce and just a few simple and healthy ingredients!

1 (½ lbs.) plum tomatoes
1/3 cup chopped fresh basil
1 Tablespoon minced garlic
1 Tablespoon chopped fresh oregano
1 Tablespoon balsamic vinegar
1 Tablespoon olive oil ( plus additional for brushing on bread )
1 teaspoon fresh lemon juice
1 baguette ( sliced into ½-inch-thick slices )
Grated Parmesan cheese ( optional )
Salt and pepper ( to taste )
