Brussel Sprouts Veggie Salad

A skinny lemon dressing that is so creamy and delicious covers this spring mix salad with brussels sprouts and fresh vegetables

1 pound (about 4-5 cups) shredded brussels sprouts
5 cups arugula or spring mix salad
2 large boneless skinless chicken breasts (plus olive oil, salt, pepper, and Mrs. Dash chicken grilling blends)
1 cup red cherry tomatoes
1 cup yellow cherry tomatoes
1 cup shredded carrots
3/4 cup grated Parmesan cheese
Dressing
1 tablespoon olive oil
1/2 tablespoon dijon mustard (do not use regular mustard)
1/3 cup grated Parmesan cheese
1/4 cup fresh lemon (do not use from concentrate)
1/4 cup + 1 tablespoon 0% plain Greek yogurt
1/4 teaspoon garlic powder
1/8 teaspoon salt

Marinated Taro Root

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
