This buffalo chicken hash is a game day spin on a classic breakfast! It’s quick, easy and healthy – your new favorite way to start the day.

1 cup baking potato, cubed (large)
1 tablespoon olive oil
1/2 small onion, chopped
2/3 cup red pepper, thinly sliced
2 teaspoons garlic, minced
2 links chicken sausage, sliced
salt and pepper, pinch of each
1/2 cup reduced fat shredded cheddar cheese
2 eggs
For Topping:
buffalo wing sauce, drizzle
1 green onion, sliced
1 tablespoon olive oil
