This healthy Buffalo chicken shepherd’s pie is crowned with a mixture of mashed potatoes, cauliflower, and blue cheese for loads of traditional Buffalo flavor in every bite.

4 Russett potatoes, peeled and chopped
1 cup cauliflower florets
½ cup milk (or non-dairy milk of your choice)
½ cup blue cheese crumbles1 onion, chopped
4 carrots, peeled and chopped
4 celery ribs, peeled and chopped
1 pound ground chicken
3 tablespoons all-purpose flour
¾ cup low sodium vegetable broth
¼ cup Buffalo sauce
1 cup cauliflower florets
½ cup milk (or non-dairy milk of your choice)
