Bulk Garlic - Long Term Storage

Do you buy bulk garlic just to watch half of it spoil before it can be used? I used to have that problem as well. I found that you can save garlic by freezing it if you follow this recipe.

As a budget conscious consumer, I prefer to buy my vegetables and other produce in bulk. The problem is that the produce often spoils before I am able to use it all. Garlic is one of those few produce items that a person can store in a freezer without fear of it going bad. The following is a recipe to store garlic in the freezer. As long as you add enough olive oil, it can be used at any time since olive oil remain soft even after freezing. It can be used for any purpose. It's can even be sautéed. 1. Peel the garlic cloves and cut off any bad spots. 2. Put the garlic into the food processor. 3. Pour in as much olive oil as you feel would give it a 1:1 ratio to the garlic.(This may seem excessive, but it is necessary in order to spoon it out once it freezes. It is rock hard otherwise.) 4. Purée until it has the consistency of mashed potatoes. 5. Pour into the tupperware container of your choosing. 6. Place in either the refrigerator or freezer. It will keep longer in the freezer. A quick note: do not contaminate your mixture with dirty utensils as it will not keep near as long.
