Butternut Squash and Chicken Risotto

A seasonal risotto with creamy, pan-fried squash.

2 cups rice
4 cups chicken broth
1 large chicken breast
½ onion, chopped
4 cloves garlic, minced
5-6 sage leaves (diced or whole)
1 sprig rosemary
1 ½ cups butternut squash, diced
2 tbsp olive oil
½ cup cooking sherry wine
¼ cup fresh Parmesan
salt and pepper
