A creamy, healthy-for-you soup that's great for fall. The butternut squash adds beautiful color and major amounts of fiber and vitamin A!

12 oz cooked sausage, cut into medallions
4 cups cubed peeled butternut squash (1 small to medium squash)
3 carrots, chopped
1 stalk celery, chopped
½ medium onion, chopped
2 ½ cups chicken broth
2 ½ cups water
¾ salt, plus more and pepper, for seasoning (optional: oregano)
