Caramel Apple Crepes

These delicious crepes are great for breakfast, Kids love them!

CREPE BATTER:
3/4 Cups of flour
1/3 cups of water
2 Tablespoons of sugar
1/3 cup of milk
2 eggs
4 teaspoons of oil
SAUCE:
1 cup brown sugar
1 cup whipping cream
1 Tablespoon butter
4 teaspoons cornstarch
2 Tablespoons of Apple Juice
2 Cups of thinly sliced apples (I use Granny Smith)
Place all ingredients for the batter in a blender and mix until smooth. You may need to scrape the sides. Heat a lightly oiled pan over medium heat. Remove from heat and pour a small amount of batter onto the pan. Tilt the pan in a circular motion so the batter coats the surface evenly. Place back onto heat and cook the crepe for about 2 minutes, or until the bottom is light brown. Loosen with a spatula and then flip and cook the other side. For the sauce: In a bowl mix cornstarch into whipping cream so there are no clumps. In a large saucepan, mix all ingredients. Cook over medium heat until thick and bubbly and then cook two minutes more. Serve the crepes rolled up with the sauce on the inside, or flat with the sauce spooned over top. Top with powdered sugar, nuts and whipped cream for extra goodness!
