Caramel Doughnuts with Brown Sugar Custard by Sugar Salt Magic. Soft, light doughnuts with a caramel icing and filled with a thick, sweet brown sugar custard.

For the Doughnuts;
¾ cup milk
1 sachet (7g or 2 ¼ tsp) instant yeast
3 ½ cups (450g) plain flour
50g (4Tbsp or 1/4 cup) of sugar
½ tsp salt
2 whole eggs
1 egg yolk
100g butter, softened
2L vegetable (canola / sunflower / rice bran) oil
For the Custard;
3 egg yolks
40g (about 4 Tbsp*) plain flour
1/3 cup brown sugar
1 cup full fat milk
2 tsp vanilla extract
100ml whipping or heavy cream
For the Caramel Icing:
30g butter, chopped
¼ cup dark brown sugar
1 Tbsp* milk
1/3 cup icing sugar
