New England Clam Chowder – an easy to follow clam chowder recipe that is chunky, creamy and delicious to the last drop.

8 center-cut bacon strips, cut into pieces
2 Tbsp Butter
2 celery stalks, finely chopped
1 large onion, chopped
1 leek, finely chopped
4 garlic cloves, minced
4 small potatoes, peeled and cubed
1 cup broth (I used chicken)
1 bottle (8 oz) clam juice
1 tsp Carrie’s Seasoning
1/8 tsp dried thyme
1/3 cup all-purpose flour
2 cups fat-free half-and-half, divided
3-4 cans (6-1/2 oz each) chopped clams, undrained (just depends on how many clams you want in the soup)

In a large saucepan, cook bacon over medium heat until crisp.
Remove bacon with a slotted scoop and place on paper towels to drain; set aside.
