A delicious and healthier version of carrot and apple cake, with less refined sugar, healthy coconut oil and more fiber.

110 g coconut oil
50 g brown sugar
3-4 tbsp. raw honey
1 cup wholemeal flour
1 cup ground linseed
2 carrots
1 big green apple
2 teaspoons of baking powder
1 teaspoon cinnamon
½ teaspoon ground nutmeg
1 teaspoon vanilla extract
1/3 cup golden sultanas
1/3 cup chopped walnuts
