300g Shredded Carrot
150g Feta Cheese, crumbled
100g pistachios
1 large bunch (about 15 – 20g) continental parsley, coarsely chopped
2 tbsp, mint leaves, finely chopped
salt and pepper to taste
For the Dressing:
3 tbsp olive oil
1 tbsp tahini
½ tbsp. lemon juice
1 tsp harissa (or more to taste, depending on you love of chilli)
½ tsp ground cumin
½ tsp ground black pepper
pinch of salt
