Carrot Mashed Potato with Smoked Salmon

Rich and colorful potato snack!

2 russet potatoes
1 carrot
2 ounces smoked salmon
1/8 teaspoon salt
1/8 teaspoon ground pepper
2 tablespoon chopped green onions
Peel the potatoes and cut into chunks. Cut the carrot into chunks. Cut the salmon into small pieces (omit for vegetarian) Boil a pot of water, add salt, then put tomato and carrot into the pot. Boil for 20 to 25 minutes or until soft. Drain potato and carrot, put them in a deep bowl and mash with a spoon or fork. Add smoked salmon and green onions. Season with ground pepper as desired.
