Carrot Soup Recipe

A tasty soup that is a great way to get children to like the taste of carrots.

1 pound ofcarrots diced into small pieces
3 ounces of parsnips diced fine
1 1/2 ounce of onion diced
12 ounces of chicken broth
16 ounces of water
2 ounces of salted butter
1/2 teaspoon each of salt, black pepper, oregano, parsley and thyme
In a soup pot place all of the ingredients except for the butter, cover with a lid and place on medium heat for about 1 hour and 15 minutes. Remove from heat when vegetables are soft and add the butter. Next, take a potato masher and quickly mash the ingredients to the proper consistency. Serve with a salad and fresh bread.
