Cat's Tongue Cookies

Cat Tongue Cookies are not cake made of the cat's tongue ... cat's tongue cookies are called this because its shape is similar to the shape of a cat's tongue. This recipe is a basic cookie that can be turned into gorgeous fancy treats by filling with jam like a sandwich or chocolate or dipping into chocolate...or both. The possibilities are endless.

6 tablespoons (3/4 stick) butter, softened
1 1/4 cups confectioners' sugar
1 teaspoon vanilla extract
1/2 cup egg white (from about 3 to 4 large eggs)
1 cup all-purpose flour
Line 4 cookie sheets with buttered foil. Preheat oven to 400°. Beat together the butter, confectioners' sugar, and vanilla until well mixed and smooth, about 2 minutes. Add the egg whites in about five or six additions, beating smooth after each. With a large rubber spatula stir in the flour. Fit a pastry bag with a 1/4-inch tube and pipe the batter in 2 1/2-inch fingers on the prepared pans. Leave about 1 1/2 inches all around each to allow for spreading. Bake for about 6 to 7 minutes, or until cookies have spread and are golden around the edges. Slide the foil sheets onto cooling racks. Carefully remove the cooled cookies. Makes about 150 Cat's Tongues. **Special Note: To make sure the cookies don't become distorted, rub the foil lining flat with a paper towel. Then it's easy to brush the foil with soft, not melted, butter. OPTIONAL: Drizzle with melted chocolate or dip on end in chocolate for added sweetness, flavor and eye appeal.
