Crunchy, creamy cheesy goodness all wrapped up in a healthy Cauliflower Potato Blue Cheese Tot

1 ½ cups shredded potatoes (I used frozen that have been thawed)
1/3 head raw cauliflower, cut into quarters
2 tbsp. water
1 1/2 oz. blue cheese, crumbled
¼ cup all-purpose flour
½ tsp. kosher Salt
1/8 tsp. fresh ground black pepper
1/2 cup panko bread crumbs
½ tsp. smoky paprika

Blue Cheese Dip:
1/2 oz blue cheese crumbled
¼ cup non-fat Greek yogurt
1tsp to 1 tbsp. Franks red hot sauce
Preheat oven to 425°. Place a large wire rack on top of a baking sheet. Place cauliflower in a food processor and pulse until cauliflower is the size of rice. You want about 1 ½ cups of cauliflower. ...
