A veggie filled quesadilla that doesn't taste as healthy as it is

1 poblano chile
1 small head of cauliflower, chopped into 1 inch chunks
1 ½ tablespoons olive oil, divided
¼ teaspoon salt
½ teaspoon black pepper
1 small onion, diced
1 clove garlic, minced
1 large tomato, diced
1 cup spinach leaves
3 green onions, thinly sliced
1 tablespoon lime juice
1 ½ cups monterey jack cheese, shredded
12 whole grain tortillas
