Cheese and dill fried bread

Cheese and dill fried bread is a delicious Romanian snack, easy to make. It’s perfect as a fast and simple dinner. Nothing compares to eating a piece of hot cheese an dill fried bread, but that doesn’t mean you can’t eat it cold too. Leftovers can be kept for the next day’s breakfast, to be enjoyed next to a cup of tea, or can be taken to work/school as lunch.

500 g flour
25 g yeast
1 cup warm water
1 teaspoon salt
½ teaspoon pepper
½ cup oil ( any kind )
250 g cheese ( the softer the better )
A handful of dill

1. Dissolve the yeast in the warm water ( be careful not to use hot water, because high temperatures will kill the yeast ).
2. Combine the yeast water, salt, pepper and flour. Use a spoon to blend the ingredients until the dough becomes hard to mix.
3. Start kneading the dough with you hands, adding a little bit of oil once in a while.
4. Knead dough until it stops being sticky. If it’s too hard kneading it in the bowl, you can transfer it to the kitchen countertop. After kneading, leave to rise for about 30 minutes.
5. While the dough is rising, wash and finely chop the dill, mash the cheese with a fork and combine them in a bowl.
6. When the dough has risen, take half of it and using a rolling pin spread it over a slightly oiled kitchen countertop. The dough should be no thicker than 0.5 cm. Then, using a bowl or a plate, cut a round shape.
7. Take two tablespoons from the cheese mixture and spread them over the dough.
8. Fold the circle, making sure that the mixture stays inside. You could now flatten the dough again,.
9. Fry the bread on both sides until nicely brown.
