Cheesecake Bars

These Cheesecake Bars have a delicious sugar cookie crust and a distinctly lemon flavor that makes them taste like a cross between cheesecake and a lemon bar

1 (16.5 oz) pkg refrigerated sugar cookie dough
2 (8 oz) pkgs cream cheese, softened
3/4 cup sugar
2 eggs
2 tbsp lemon juice
1 tbsp grated lemon zest
2 1/2 tsp vanilla
graham crackers, for topping
fresh strawberries, for topping

Preheat oven to 350. Lightly spray a 13x9 inch baking pan with cooking spray. Crumble the cookie dough into the pan and use fingers to press into an even layer. Bake for 20-25 minutes, or until golden...
