Pie is pretty much the perfect dish. It combines soft, flaky, crunchy, gooey, buttery, and all the other yummy adjectives all in one. So here is how you can make your own Cheesy Autumn Squash & Potato Pie.

Ultimate Pie Crust:
1 cup unsalted butter
2 1/2 cups all purpose flour
1 tsp salt
1/2 cup cold water

Pie Filling:
1 butternut squash
1 spaghetti squash
2 tablespoons cup melted butter
3/4 cup brown sugar, packed
1/4 teaspoon nutmeg
2 Yukon gold potatoes (skin on)
1 teaspoon salt
1 teaspoon pepper
3 cups smoked Gouda, shredded
3 cups heavy cream
