Cheesy Bacon and Chicken Loaded Potatoes

Mashed potatoes loaded with Bacon, Cheese and Chicken!

1- 16 oz package of bacon
1 baby onion (small) or you can use 1/2 a regular sized onion
1-2 cups shredded cheese (If you are a cheese lover I would say 2 cups if not just 1)
5 medium sized potatoes peeled and cubed
3-4 boneless skinless chicken breasts
Preheat you oven to 400 degrees. Peel and cut up your potatoes while your oven is preheating. Once your oven is ready throw your chicken breasts in the oven to cook. I put mine it at 400 degrees until its cooked. Depending on how thick your chicken is it will vary but I would say about 20-25 minutes. Sometimes I will season mine with whatever sounds good or add a teaspoon of butter even but of course that is optional. Once it is done you will need to shred it and add it to your potatoes. While your chicken is baking, put your potatoes into a saucepan and add water until the potatoes are covered. Bring to a boil and let cook on high about 10-15 minutes or until done. (a fork can easily be poked through them when they are done) Use a hand mixer or potato masher to mash them all up to whatever consistency you like yours to be. For me I like to even add a touch of milk sometimes to make mine a little more creamy. Cover and set them to the side. Chop up your uncooked bacon and your onion and add to a frying pan. Cook on medium heat until the bacon is done and then drain the grease. Add your bacon and onion to your potatoes and add in half of your shredded cheese and mix it all up. You can add the remaining cheese on top. We had corn as a side as you can see in the picture, though you could also just add it to the mix or anything else that you may like. The options are endless to customize it to your families liking!
