Cheesy Chicken Casserole

Rice and chicken covered with cheesy goodness. This all in one meal will surely fill you up quick!

1 8oz cream of cheddar soup
1 cup milk
1 lb boneless chicken breasts, cut into strips or small pieces
1 1/2 cup instant brown rice
1 1/2 cup mixed vegetables
1 cup shredded cheddar cheese
1/2 cup sour cream, light
1 tbsp olive oil
Garlic powder, dash
Onion powder, dash
Paprika powder, dash
Cayenne powder, dash
Salt, dash
Black pepper, dash
Coat skillet pan with olive oil, add chicken, sprinkle seasonings and cook throughly. Add soup, sour cream and milk and bring to boil. Stir in rice and vegetables and mix well. Cover and cook on low heat until rice is tender. Mix in shredded cheese. Enjoy! * May need to add more milk or water to rice to avoid rice drying out. *Stir frequently to avoid rice sticking to bottom of pan.
