Cheesy Country-Style Vegetable Soup

This soup is delicious and so easy to make. Just toss everything in the pot and simmer it. Some of the ingredients may sounds different mixed together, but trust me it tastes awesome!

2 Tbsp. butter or margarine
1 cup chopped onion
2 cans chicken broth
2 cans diced potatoes
1 - 16oz pkg. frozen mixed vegetables, thawed (I used a broccoli stir fry mix with broccoli, carrots, peas, and cauliflower)
1 can whole-kernel corn
1 can cream-style corn
1 can Rotel tomatoes with green chilies
1 small pkg. country-style gravy mix
1 - 16oz pkg. Velveeta cheese, cubed
In a large pot, melt butter or margarine over medium high heat. Add onion. Cook and stir until tender, about 5 minutes. Add chicken broth and bring to a boil. Add potatoes and mixed vegetables and simmer for 5 minutes. Add corn and Rotel and bring to a boil. Dissolve gravy mix in the milk and stir into the boiling mixture. Add cheese and cook and stir over low heat until cheese is completely melted.

1 fl. oz. Carpano Antica Formula Vermouth
1 fl. oz. Campari

Stir with Ice & Strain
Pour into Rocks Glass
Garnish with Orange Peel
