Cheesy, Easy, Scalloped Potatoes

A fairly low-cal option for one of our potato favorites!

olive oil spray
2 cloves of garlic, smashed & finely minced
1 cup onion, chopped
1 cup low-fat milk
¾ cup chicken broth
2 tbl. all purpose flour
½ tsp. sea salt
1/8 tsp. white pepper
2 tbl. fresh parsley, chopped
5 medium potatoes. peeled and sliced ¼” thick (if really fresh home-grown potatoes, don’t bother peeling)
1 cup cheddar cheese, shredded

12 cherry tomatoes, seeded & thinly sliced (you can use a regular tomatoe if you have them in your garden)
